Total: 8 hour 20 minutes

Category: Main Course

Cuisine: British

Yield: Serves 4 to 6

This shin of beef slow cooker recipe is a proper winter warmer. It is based on our beef casserole recipe, but adapted for cooking beef shin low and slow until it becomes rich, tender, and full of flavour.

Beef shin is one of those cuts that rewards patience. It can be tough if cooked quickly, but in the slow cooker it becomes beautifully soft, with the connective tissue breaking down into the gravy and giving you that deep, rich flavour you want from a proper beef stew.

Serve it with chunks of crusty bread, creamy mash, dumplings, or whatever you fancy. However you serve it, this is simple comfort food done properly.

What Is Shin of Beef?

Shin of beef, also known as beef shin, comes from the lower leg of the animal. It is a hardworking cut, which means it contains plenty of connective tissue and collagen.

That might not sound exciting, but it is exactly what makes shin of beef so good in the slow cooker. When cooked low and slow, the collagen breaks down, the meat becomes tender, and the cooking liquid turns into a rich, glossy gravy.

It is not a cut for quick frying, but for slow cooking, casseroles, stews, braising and pies, it is excellent.

Is Shin of Beef Good in a Slow Cooker?

Yes, shin of beef is ideal for the slow cooker.

Because it is a well-worked muscle, shin of beef needs time to become tender. The slow cooker gives it exactly that: gentle heat, moisture, and several hours for the meat to soften properly.

The result is tender beef, rich gravy, and a dish that tastes like it has taken a lot more effort than it actually has.

Is Shin of Beef Tough or Tender?

Shin of beef starts off as a tougher cut because it contains a lot of connective tissue. If you cook it quickly, it can be chewy.

Cook it low and slow, though, and it becomes soft, rich and tender. That is why shin of beef is so well suited to slow cooker recipes, stews, casseroles and braised dishes.

Can You Slow Cook Any Cut of Beef?

Not every cut of beef is best suited to slow cooking.

Slow cooking works best with cuts that contain more fat, collagen and connective tissue, such as shin, chuck steak and brisket. These cuts have plenty of flavour and can handle long cooking times without drying out.

As a general rule, the cuts that are tougher when quickly fried are often the ones that become most tender and flavourful when cooked low and slow.

Can You Put Raw Shin of Beef in the Slow Cooker?

Yes, you can put raw shin of beef straight into the slow cooker.

However, for the best flavour, it is worth browning the beef first in a hot frying pan. Browning adds colour, depth and extra flavour to the finished stew.

If you are short on time, you can still put everything straight into the slow cooker. It will not have quite the same depth of flavour, but it will still make a tasty meal.

Shin of Beef Slow Cooker Recipe

This simple shin of beef slow cooker recipe uses diced beef shin, root vegetables, beef stock and tomato puree. It is hearty, comforting, and ideal for colder days.

Ingredients

  • 1kg diced shin of beef
  • 1 to 2 tablespoons olive oil
  • 4 tablespoons flour
  • 4 tablespoons tomato puree
  • 500g celery, diced
  • 500g parsnips, peeled and diced
  • 500g onions, peeled and quartered
  • 500g carrots, peeled and cut into chunks
  • 1 litre beef stock
  • Salt and black pepper, to taste

Method

  1. Brown the beef - Add 1 tablespoon of olive oil to a large frying pan over a high heat. Once the pan is hot, add the shin of beef and brown on all sides. Remove with a slotted spoon and place in the slow cooker.
  2. Brown the vegetables - Lightly brown the celery, parsnips, onions and carrots in the frying pan, then add them to the slow cooker with the beef.
  3. Add the stock and tomato puree - Set the slow cooker to low, then add the tomato puree, beef stock, salt and black pepper.
  4. Stir in the flour - Stir the flour into the liquid to help thicken the sauce as it cooks. If you prefer, you can mix the flour with a little cold water first to make a smooth paste.
  5. Cook low and slow - Put the lid on and cook on low for 6 to 8 hours, or until the shin of beef is soft, rich and tender.
  6. Serve - Serve with mashed potatoes, crusty bread, dumplings, rice or seasonal vegetables.

How Long Does Shin of Beef Take in the Slow Cooker?

Shin of beef usually takes around 6 to 8 hours on low in the slow cooker.

You can cook it on high if you are short on time, but the best result comes from low, gentle cooking. If the beef is still firm or chewy, leave it a little longer. Shin of beef becomes better the more time you give it.

Why Is My Shin of Beef Tough?

If your shin of beef is tough, it usually needs more time.

The connective tissue in beef shin needs several hours to break down properly. If you stop cooking too soon, the meat can still feel firm. Keep it cooking on low until the beef is tender and pulls apart easily.

What to Serve with Slow Cooker Shin of Beef

Slow cooker shin of beef is rich and comforting, so it works well with simple sides.

Good options include:

  • Mashed potatoes
  • Crusty bread
  • Dumplings
  • Roast potatoes
  • Rice
  • Buttered greens
  • Yorkshire puddings
  • Seasonal vegetables

For a proper winter dinner, mash or crusty bread is hard to beat.

Can You Freeze Slow Cooker Shin of Beef?

Yes, slow cooker shin of beef freezes well.

Allow it to cool fully, then portion into airtight containers or freezer bags. Freeze for up to 3 months. Defrost thoroughly in the fridge before reheating until piping hot throughout.

I added tyme, smoked paprika and red wine to the dish, made sure meat was well seared then put on high to bring it up to temp and then back to low. Added cornflour at the end, perfect melt in your mouth beef.

I tried this recipe today and set it on low on my Ninja slow cooker function. 6 hours later meat not fully cooked and veg raw. I’m now trying it on high for a couple of hours. Wondering at what point I lift the veg out to stop over cooked meat ā˜¹ļø
