This pulled beef brisket recipe is all about low-and-slow cooking, deep beef flavour, a simple dry rub and a rich homemade BBQ sauce.

For the beef
- 1.5kg to 2kg beef brisket
- 175ml beef stock
For the BBQ sauce
- 1 tbsp olive oil

- 1 garlic clove, crushed
- 100ml tomato ketchup
- 100ml passata
- 35ml Worcestershire sauce
- 25ml lemon juice
- 1 tbsp brown sugar
- 1 tsp malt vinegar
- 1 tsp French mustard
- ½ tsp chilli flakes
- ½ tsp Tabasco sauce
- ½ tsp dried thyme
For the dry rub
- 1 tbsp chilli powder
- 1 tbsp mustard powder
- ½ tsp paprika
- ½ tsp ground cumin
- ½ tsp garlic powder
- ½ tsp ground black pepper
- ½ tsp caster sugar
- 1 bay leaf, crushed
How to make pulled beef brisket
- Make the dry rub by mixing all the rub ingredients together. A food bag works well for this; add everything and give it a good shake.
- Rub the mixture all over the beef brisket. If you have time, leave the beef to sit in the rub for around 1 hour.
- Preheat your oven to 150°C, 130°C fan, Gas Mark 2.
- To make the BBQ sauce, heat the olive oil in a frying pan, then cook the onion and garlic for around 5 minutes, until soft.
- Add the rest of the BBQ sauce ingredients and simmer gently for around 20 minutes.
- Blend the sauce until smooth using a food processor or blender.
- In a large casserole dish, mix the beef stock and BBQ sauce together.
- Add the brisket to the dish and place the lid on.
- Cook for 4 to 5 hours, or until the meat is tender enough to pull apart.
- Remove the brisket from the dish and reserve the cooking liquid.
- Pull the beef apart using two forks.
- Add the reserved sauce back into the pulled beef a little at a time, depending on how saucy you like it.
- Serve in fresh bread rolls with your favourite sides.
