French trimmed lamb cutlets, expertly prepared by our family butchers from the best end (rack) of lamb. Each cutlet features a tender, flavourful eye of lamb with a long, exposed rib bone, creating the distinctive lamb tomahawk chop presentation.

Carefully French trimmed with the chine bone removed, these premium lamb cutlets are ideal for pan frying, grilling or cooking on the BBQ. The natural fat adds flavour during cooking, helping to keep the meat beautifully juicy and tender.

Perfect for special occasions, dinner parties or simply enjoying a restaurant-style lamb dish at home.

Our lamb cutlets are delivered fresh and suitable for home freezing.

Cooking Instructions

How to Cook French Trimmed Lamb Cutlets

Pan Fry: Remove cutlets from the fridge 20 minutes before cooking. Season and heat a little oil in a frying pan over a medium-high heat. Cook for approximately 3–4 minutes per side, depending on thickness.

Grill: Preheat the grill to medium-high. Lightly oil and season the cutlets, then grill for approximately 4–5 minutes per side, turning once.

BBQ: Cook over medium-high heat for approximately 3–5 minutes per side, turning as required. Avoid prolonged direct flames to prevent the fat burning.

Allow the cutlets to rest for 5 minutes before serving.

Product FAQs

Frequently asked questions about this product:

What are French trimmed lamb cutlets?

French trimmed lamb cutlets are individual chops cut from the best end (rack) of lamb. The rib bone is exposed and cleaned, with the chine bone removed, giving each cutlet its distinctive presentation.

Are lamb cutlets the same as lamb tomahawk chops?

Yes, lamb tomahawk chops generally refer to French-trimmed lamb cutlets with a long exposed rib bone. Both are cut from the rack of lamb, although the amount of bone exposed can vary between butchers.

What's the difference between lamb cutlets and lamb loin chops?

Lamb cutlets are cut from the rack and have a single rib bone attached. Lamb loin chops are cut further along the loin and typically contain a T-shaped bone. Both are tender cuts, but they differ in shape and presentation.

Can I freeze French trimmed lamb cutlets?

Yes. Our lamb cutlets are delivered fresh and are suitable for home freezing. Freeze promptly in suitable packaging and defrost thoroughly in the fridge before cooking.
