Cut from the cheek muscle, this hardworking cut is naturally rich in connective tissue which breaks down during slow cooking to create exceptionally tender meat and deep, glossy sauces. Limited in quantity and prized for its flavour.
Best cooked low and slow — braised in red wine, slow-cooked in stout, or prepared for rich ragù and barbacoa-style dishes. When given time, ox cheek becomes meltingly tender with bold beef character.

How to Cook Ox Cheek
Remove all packaging and allow to come to room temperature for 20–30 minutes. Season as required. Cover and cook low and slow at 150°C (Fan 130°C / Gas 2) for approximately 3–4 hours, or until tender. Ensure the product is piping hot throughout before serving.
