Cut from the eye of the loin and trimmed of excess fat, these medallions offer a leaner bacon option without compromising on flavour.

Approximately 8-10 rashers per pack.

Cooking Instructions

How to Cook Lean Bacon Medallions

Bacon rashers can be grilled, pan-fried or cooked in the oven. For pan frying, place the rashers in a frying pan over a medium heat and cook for a few minutes on each side until cooked through and as crisp as you like.

To grill, place under a preheated medium-high grill and cook for around 3–5 minutes on each side, turning once during cooking.

For oven cooking, arrange the rashers in a single layer on a baking tray and cook at 200°C / 180°C fan / Gas 6 for around 15–20 minutes, turning halfway through. Cooking times will vary depending on the thickness and type of bacon.

Storage Instructions

Store at 0 - 4°C. Once opened keep refrigerated and use within 3 days. This product is delivered fresh so is suitable for home freezing. Freeze in your desired portions on day of delivery. Defrost thoroughly in a refrigerator before use. Once defrosted do not refreeze.

What are bacon medallions?

Bacon medallions are made from the lean eye of the pork loin, with most of the surrounding fat removed. They give you the familiar flavour of back bacon in a much leaner rasher.

What is the difference between bacon medallions and back bacon?

Both are made from cured pork loin. Back bacon includes more of the surrounding fat, while bacon medallions are heavily trimmed so that mainly the lean eye of the loin remains.
