How to Cook Marinated Spatchcock Chicken
Oven roast at 200C/180C fan/gas 6 in the centre of a preheated oven. Cook for 35 - 40 minutes. To char the skin, grill for a further 5-10 mins. Ensure that the centre of the deepest part of the meat is piping hot, and the juices run clear. If the juices are pink continue cooking until they run clear. Remove from oven and rest for 5 minutes before serving.
To BBQ: Light the bbq and wait for the flames to die down. Place the chicken on the centre of the barbecue, skin-side down, and cook for 15 - 20 mins until nicely charred. Turn the chicken over and continue cooking for another 10 - 15 mins until cooked through. Check that the juices run clear, as the heat of every barbecue will vary.
Store at 4°C. Once opened keep refrigerated and use within 24 hours. This product is delivered fresh so is suitable for home freezing. Freeze in your desired portions on day of delivery and defrost thoroughly in a refrigerator before use. Once defrosted do not refreeze.
