Our experienced butchers remove all the bones (except the very end wing and leg bones) so the bird can then be opened up and cooked flat. At least 1.00KG each, these are delicious on the BBQ, but also great for hassle free roast dinners, as they're easy to cook and you don't have to spend time carving the meat off the bone to serve.
Our True Bites spatchcock chicken are butchered and prepared using Farm Assured chicken, all of which we source from local Shropshire farms, where welfare and traceability are imperative. We believe this is the only way to guarantee the highest quality chicken possible.
How to Cook Whole Spatchcock Chicken
Season with salt and pepper, or your favourite sauce and oven roast at 200C/180C fan/gas 6 in the centre of a preheated oven. Cook for 35 - 40 minutes. To char the skin, grill for a further 5-10 mins. Ensure that the centre of the deepest part of the meat is piping hot, and the juices run clear. If the juices are pink continue cooking until they run clear. Remove from oven and rest for 5 minutes before serving.
To BBQ: Light the bbq and wait for the flames to die down. Place the chicken on the centre of the barbecue, skin-side down, and cook for 15 - 20 mins until nicely charred. Turn the chicken over and continue cooking for another 10 - 15 mins until cooked through. Check that the juices run clear, as the heat of every barbecue will vary.
Store at 4°C. Once opened keep refrigerated and use within 24 hours. This product is delivered fresh so is suitable for home freezing. Freeze in your desired portions on day of delivery and defrost thoroughly in a refrigerator before use. Once defrosted do not refreeze.
