So, we've been making chicken paupiettes (or chicken cushions as I like to call them) for our customers for years now, and even though they can be fiddly to create, we do love making them. They always look so good when they're prepared. The only thing is, we often get asked for suggestions on how to serve them, and up until now we've not had a concrete recipe suggestion that we really like. That's why I put my mind to this recipe.
It's a long story, but my other half has been on an elimination diet, which has meant we've had to change up a lot of the food we cook at home. This has taken me down an exciting path of herb discovery, and in a round about way, these new flavour frontiers have led me to discover chives. Chives are tasty. I mean, I'm not sure how I hadn't discovered them before. Anyway, this chive discovery seemed to perfectly coincide with us deciding to finally do a paupiette recipe, so it seemed right to combine the two. The timing was perfect, but it also has to be said that, chicken, black pudding and chive are a really great flavour combination. I'm sure you'll agree.
